- 1/2 cup Cucumber (thinly sliced)
- 10–12 Fresh Mint Leaves (plus extra for garnish)
- 1 Lime (juiced)
- 1.5 cups Sparkling Water (chilled)
- to taste Stevia or Erythritol (optional)
- to taste Ice
Instructions
- In a sturdy glass, combine the cucumber slices, fresh mint leaves, and lime juice. If using, add a tiny pinch of stevia or erythritol here.
- Gently muddle the ingredients using a muddler or the back of a spoon. You want to bruise the mint and lightly crush the cucumber to release their flavors, but don't pulverize them.
- Fill the glass with plenty of ice.
- Pour in the chilled sparkling water. Give it a gentle stir to combine the flavors without losing too much fizz.
- Garnish with a fresh sprig of mint and a thin cucumber slice. Serve immediately and enjoy your refreshing, low-calorie sparkler!
