Ingredients

  • 1/2 cup Cucumber (thinly sliced)
  • 1012 Fresh Mint Leaves (plus extra for garnish)
  • 1 Lime (juiced)
  • 1.5 cups Sparkling Water (chilled)
  • to taste Stevia or Erythritol (optional)
  • to taste Ice

Instructions

  • In a sturdy glass, combine the cucumber slices, fresh mint leaves, and lime juice. If using, add a tiny pinch of stevia or erythritol here.
  • Gently muddle the ingredients using a muddler or the back of a spoon. You want to bruise the mint and lightly crush the cucumber to release their flavors, but don't pulverize them.
  • Fill the glass with plenty of ice.
  • Pour in the chilled sparkling water. Give it a gentle stir to combine the flavors without losing too much fizz.
